I've always used RCA but was watching a video that mentioned the digital output on the CDJs and DJM mixers

You can use a basic RCA cable in the digital port. Those are higher quality cables in the link you posted, but frankly I am not terribly convinced they make a world of difference.

Yes, digital is a single cable for the full audio signal.

The digital connections do give better sound quality but this is really only applicable as long as you pay attention to the entire audio chain - good quality / uncompressed music / good speakers etc. But every little helps ;)
