Anyone have an opinion on whether the RG6U vs the RG59U digital audio cable makes a difference in sound quality for strictly audio recording?

RG-6 and RG-59 will both carry a 75ohm signal... but your best bet will be to just buy a pre fabricated digital coax S/PDIF cable. You can get good quality ones pretty cheap and having the ends molded on with stress relief is always a good thing.
