I'm looking at getting a new mixer soon and am leaning towards the 700 over the 800 as it is a bit cheaper. What i want to know is, if i have the buttons midi assigned (through ableton) on the 700, would this be set up and ready to go if i were to connect my laptop to an 800? (as i know others who own the 800)

Yes and no ... some of the assignments are similar but there are more MIDI points on the 800 so obviously they'd be missing from the 700 map.

... He won't regret it, but the 700 can do some things the 800 can't.
