BPMs can change if the beat grid is set incorrectly.  Go through the tracks that are being affected by this issue and ensure that the beat grid markers are set correctly from start to finish.

Is it safe to assume that when you say 'practice without the waveform' you mean practice beat/phase matching without rekordbox analysis and sync?

If that's your aim then I'm not sure why the Bpm variation is an issue as part of beat matching is matching the Bpm manually (by ear). You could well be faced with old kit in a venue without a Bpm display.

Otherwise, use the Bpm that the unit gives you when the beats going and set your next track to that. It'll get you 95-99% of the way to the correct Bpm.

Mid its just that the waveform is distracting well..... You brought the wrong product I'm afraid.

Realised I didn't answer your question.

Change in Bpm is likely the system trying to analyse the Bpm when there isn't a steady beat to use.
