I have been using a DDJ-SZ + MB Pro 2015 for the last 5 years.
The DDJ-SZ came in with Serato, which I hated, and after Rekordbox performance (4.0.0) was released I purchased it for 139 EUR.
As of today, my MB Pro died. Now I plan to purchase an MB M1 max which only runs on "Monterey" macOS.
Unfortunately - you have informed us Rekordbox 5.8.6 will not be supported for Monterey.
Sadly, DDJ-SZ does not support hardware unlock for RB 6. I really love my DDJ-SZ and I don't want to update it.
My questions are:
1.Can I run my RB 5.8.6 on Monterey?
2. Can I use my RB 5.8.6 license to activate RB 6 performance features?

It might run, but most likely not without issues.

No. RB 5 license is RB 5 versions only. RB 6 is either hardware unlock units or subscription.
