So long as you maintain a consistent level on the songs you're playing by having similar gain / trim levels from song to song, the recording levels should be relatively consistent without the need to adjust it on the recording levels or normalize afterwards. Typically the recording level is a "set it and forget it." Keep your channels peaking on the mixer around the first or second orange LED, set the recording level so your peaks are out of the red and you should be good.
