
I tried plugging the 1000 into another computer (Intel 2019 iMac i5 running all the latest versions of everything) and got the same result.
When connected to my computer (MacBook Pro 16" M1 Max, MacOS 12.4) running Rekordbox 6.6.4 and driver 4.0.1, the DDJ-1000 has no audio from the booth output, and in the Rekordbox audio output settings, the popup menu for booth out only offers "Headphones" or "Main" as possible outputs. When I connect a DDJ-800, the correct settings appear, and booth output works.
I've tried removing and reinstalling the audio driver, and restarting the computer.

Found my own solution—the DDJ1000 booth out doesn't appear in the Output Channels section. Audio is working fine, must have been a problem with the cabling at the venue.
