You can do the first, but not the second...
If you wanted to use the SAMPLER mode button to call the BEAT JUMP function instead, first you need to remove the mappings for SamplerMode for decks 1-4 from the SAMPLER tab on the MIDI settings (both IN and OUT) here's what they default to:
SamplerMode 1: 9022
SamplerMode 2: 9122
SamplerMode 3: 9222
SamplerMode 4: 9322
Next, go back to the PAD tab and find the four BeatJumpMode entries (you can sort by clicking the column header) and change them to match the 4 above, again, both IN and OUT.
In order to have the 8 pads now send the correct function to the BEAT JUMP and not the SAMPLER, you need to remove the mappings for all the Sampler Play functions (or if you never use the sampler - delete them, it's probably faster).
You'll have to enter the MIDI IN/OUT data for each of the BeatJump Pad functions on the PAD tab, there are 8 pads x 4 decks, so each of the 32 pads can be programmed. Either note the values from the Sampler page before you delete them, or use the LEARN function (be sure to change the deck control where appropriate).
As for changing which jump appears as default, no, you can't change which values each pad sends as the pad buttons simply activate whichever pad set is currently loaded (even in the background). The default beat-jump page is 5 (loading 1 / 2 / 4 / 8 beats), and you can't have it default to another page or customize the beat jump pages. Hopefully in a future version!
