Press and hold the step of the note you want to edit, then dial the volume soft-knob to the desired setting.
There's lots you can do - anything labeled in red can be changed per-note / step.

FEATURE REQUEST - Edit velocity, note value, timing
I can't seem to go inside a pattern and edit the velocity of each step in the sequence. Everything is just banging out at 100% volume when I really could need some nuance.
It would make sense to be able to edit the note value or timing offsets too, come to think about it.
